the pastiera  

It is a typical cake cooked during Easter time and in spring, it can be preserved for some time (10/15 days, even though its dough is not dry), thanks to its ingredients: flour, ricotta, eggs, corn boiled in the milk, liqueur scented with orange blossoms, spices and sugar; mixing them you obtain a dough which is poured, when it is still liquid in baking-tins of different sizes; before you put it in the oven you decorate its surface with some crossed strings made of the same short pastry used for a support.
