(According the recipe of a nunnery written in the seventeenth century by a nun, characterized by a popular candour, and found accidentally by Salvatore Di Giacomo) “Take the flower and put it on the chopping board according the quantity of roll. Add same fat of pork and mix it for long time. Then roll out the dough and add other ¼ of fat of pork. Roll out the dough as it was a shawl 4 times in summer and 6 times in winter.
